Crispy Cheesy Chicken Quesadilla

Ingredients
  

2 cups cooked chicken, shredded

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup cream cheese, softened

1/2 cup sautéed bell peppers (mixed colors)

1/4 cup diced red onion

1 tsp garlic powder

1 tsp onion powder

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

4 large flour tortillas

1/4 cup fresh cilantro, chopped (for garnish)

Olive oil or cooking spray for frying

Salsa and sour cream for serving

Instructions
 

Prep the Filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, cream cheese, sautéed bell peppers, diced onion, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix until well combined.

    Assemble the Quesadilla: Place a tortilla in a large skillet over medium heat. Spread a generous amount of the chicken and cheese filling evenly over one half of the tortilla, folding the other half over the top. Press down gently to seal.

      Cook the Quesadilla: Add a splash of olive oil or spray cooking oil in the skillet. Cook the quesadilla for 3-4 minutes until the bottom is golden brown and crispy. Carefully flip and cook the other side for an additional 3-4 minutes until it’s golden brown and the cheese is melted.

        Remove and Repeat: Transfer the cooked quesadilla to a cutting board, and repeat the process with the remaining tortillas and filling.

          Slice and Serve: Cut each quesadilla into wedges. Garnish with fresh cilantro and serve hot with salsa and sour cream on the side.
