1 lb fresh salmon fillet, skinless and boneless

1 cup panko breadcrumbs

1/2 cup cornstarch

1 large egg

1 tablespoon olive oil

Salt and pepper, to taste

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for heat preference)

1 tablespoon lime juice

1 teaspoon garlic powder

2 green onions, finely sliced, for garnish

Sesame seeds, for garnish

Prepare the Salmon: Cut the salmon fillet into 1-inch bite-sized cubes. Season with salt and pepper to taste.

    Set Up Breading Station: In a shallow bowl, place the cornstarch. In another bowl, whisk the egg until beaten. In a third bowl, add the panko breadcrumbs.
