Crispy Bang Bang Chicken

Ingredients
  

1 lb chicken breast, cut into bite-sized pieces

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

2 large eggs

1 cup panko breadcrumbs

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust for spice level)

1 tbsp lime juice

Fresh cilantro, for garnish

Oil, for frying

Instructions
 

In a shallow bowl, mix the flour, garlic powder, onion powder, paprika, salt, and black pepper to create the seasoned flour mixture.

    In another bowl, whisk the eggs until well combined.

      In a third bowl, place the panko breadcrumbs.

        Dip each piece of chicken first into the seasoned flour, shaking off any excess, then into the egg mixture, and finally coat with panko breadcrumbs. Make sure each piece is fully covered.

          Heat about 1 inch of oil in a large frying pan over medium-high heat. Once the oil is hot (around 350°F or 175°C), add the breaded chicken pieces in batches. Do not overcrowd the pan.

            Fry the chicken for about 5-7 minutes, turning occasionally, until golden brown and crispy. Remove and drain on paper towels.

              In a separate bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice to make the Bang Bang sauce.

                To serve, drizzle the Bang Bang sauce over the crispy chicken pieces or toss to coat evenly. Garnish with fresh cilantro.
