Ingredients

1 pound chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

Oil for frying

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon sriracha (optional for extra heat)

Chopped green onions for garnish

Sesame seeds for garnish

Instructions

Marinate the Chicken: In a large bowl, combine the chicken pieces with buttermilk, ensuring they’re fully coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

Prepare the Coating: In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

Coat the Chicken: Remove the marinated chicken from the refrigerator. Take each piece and dredge it in the flour mixture, ensuring an even coating. Shake off any excess flour.

Heat the Oil: In a deep skillet or frying pan, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken: Carefully add the coated chicken pieces in small batches to avoid overcrowding. Fry until golden brown and crispy, about 5-7 minutes per batch. Use a slotted spoon to transfer the fried chicken to a paper towel-lined plate to drain excess oil.

Prepare the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, and sriracha until smooth.

Toss the Chicken: In a large mixing bowl, drizzle the Bang Bang sauce over the crispy chicken and gently toss to coat.

Serve: Plate the crispy Bang Bang chicken and garnish with chopped green onions and sesame seeds. Serve hot as an appetizer or main dish!
