Ingredients

1 lb flank steak (or your steak of choice)

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

2 cups cooked brown rice (or quinoa)

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 avocado, sliced

1 cup black beans, rinsed and drained

1 cup shredded lettuce (such as romaine or spinach)

1 lime, cut into wedges

Fresh cilantro, chopped (for garnish)

Optional toppings: sour cream, salsa, pickled jalapeños, feta cheese

Instructions

Marinate the Steak: In a bowl, combine olive oil, salt, pepper, garlic powder, and smoked paprika. Rub the mixture all over the flank steak. Let it marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).

Cook the Rice: Prepare brown rice according to package instructions. If using quinoa, rinse and cook it similarly. Set aside once cooked.

Sear the Steak: Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated flank steak and cook for about 4-5 minutes on each side for medium-rare, or longer based on your preference. Use a meat thermometer for accuracy (130-135°F for medium-rare).

Rest and Slice: Once cooked to your desired doneness, remove the steak from the heat and let it rest for at least 5 minutes. This allows the juices to redistribute. After resting, slice the steak against the grain into thin strips.

Assemble the Bowl: In a large bowl or individual serving bowls, layer the cooked rice or quinoa as the base. Top with sliced steak, cherry tomatoes, corn, avocado, black beans, and shredded lettuce.

Add Lime and Garnish: Squeeze fresh lime juice over the top for brightness. Garnish with chopped cilantro and any optional toppings you desire, such as sour cream, salsa, pickled jalapeños, or feta cheese.

Serve and Enjoy: Mix the ingredients together before eating to combine the flavors. Enjoy your Ultimate Steak Bowl for lunch, dinner, or any special occasion!
