8 oz rotini pasta

4 large hard-boiled eggs, peeled and chopped

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup frozen peas, thawed

1 cup mayonnaise

1/2 cup plain Greek yogurt

2 tbsp Dijon mustard

1 tbsp apple cider vinegar

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring water to a rolling boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Hard-Boiled Eggs: While the pasta is cooking, prepare the hard-boiled eggs. Once they are cooled, chop them into bite-sized pieces.

      Mix the Dressing: In a large mixing bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper. Whisk until well combined and smooth.

        Combine Ingredients: In the bowl with the dressing, add the cooked pasta, chopped hard-boiled eggs, cherry tomatoes, cucumber, red onion, and peas. Stir gently until everything is evenly coated with the dressing.
