8 oz (225g) rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup green onions, sliced

1/2 cup black olives, sliced

1 cup cooked corn (fresh or canned)

1/2 cup shredded cheddar cheese

1 cup mayonnaise

2 tablespoons Greek yogurt

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot of salted boiling water, add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
