Creamy Garlic Butter Chicken & Rotini in Parmesan Sauce

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

12 oz rotini pasta

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes for added heat

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add rotini pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

    Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken pieces, season with salt and pepper, and sauté until golden brown, about 5-7 minutes. Ensure the chicken is fully cooked, then remove from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

        Create the Creamy Base: Pour in the heavy cream and stir well. Add in the grated Parmesan cheese and Italian seasoning. Stir until the cheese has melted and the sauce is smooth. If the sauce is too thick, gradually add the reserved pasta water to reach the desired consistency.

          Combine Ingredients: Add the cooked rotini and sautéed chicken back into the skillet with the creamy sauce. Toss everything together until well coated. Adjust seasoning with additional salt, pepper, or red pepper flakes if desired.
