Creamy Chunky Tomato Soup

Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

1 celery stalk, diced

1 teaspoon dried thyme

1 teaspoon dried basil

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 cup heavy cream

1 tablespoon sugar (optional, to taste)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Crusty bread, for serving

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5-7 minutes, until the vegetables are soft.

      Sprinkle in the dried thyme and basil, mixing well to release their flavors.

        Add the crushed tomatoes and vegetable broth. Bring the mixture to a gentle simmer and cook for about 20 minutes, allowing the flavors to meld together.

          Once simmered, use an immersion blender to puree the soup until it reaches your desired creamy consistency, leaving some chunky bits for texture. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches.

            Return the soup to the pot if you've used a blender. Stir in the heavy cream and sugar (if using). Season with salt and pepper to taste, adjusting as needed.

              Allow the soup to warm through for an additional 5 minutes, then remove it from the heat.

                Serve hot, garnished with fresh basil leaves and accompanied by crusty bread for dipping.
