Creamy Chicken Lasagna with White Sauce

Lasagna noodles - 9 sheets

Cooked chicken breast - 2 cups, shredded

Ricotta cheese - 2 cups

Mozzarella cheese - 3 cups, shredded

Parmesan cheese - 1 cup, grated

Spinach - 2 cups, fresh or frozen (thawed and drained)

Garlic - 3 cloves, minced

Butter - 4 tablespoons

All-purpose flour - 1/4 cup

Milk - 4 cups (whole)

Nutmeg - 1/4 teaspoon

Salt and pepper - to taste

Olive oil - 1 tablespoon

Italian seasoning - 1 teaspoon

Fresh basil - for garnish (optional)

Instructions
 

Prepare the White Sauce: In a large saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1 minute. Whisk in the flour and cook for another minute until it becomes golden. Gradually pour in the milk while whisking continuously to eliminate lumps. Continue to cook, stirring until the sauce thickens (about 5-7 minutes). Add nutmeg, salt, and pepper, and adjust to taste. Set aside.

    Cook Lasagna Noodles: In a large pot, boil salted water. Cook the lasagna noodles according to the package instructions until al dente. Drain and lay them flat on a clean surface to prevent sticking.

      Prepare Filling: In a bowl, combine shredded chicken, spinach, ricotta cheese, and Italian seasoning. Mix well and season with salt and pepper to taste.

        Assemble the Lasagna: Preheat your oven to 375°F (190°C). Spread a thin layer of the white sauce at the bottom of a 9x13 inch baking dish. Layer 3 lasagna noodles over the sauce. Spread half of the chicken-spinach mixture over the noodles, followed by a layer of white sauce, and then sprinkle with 1 cup of mozzarella cheese. Repeat the layers once more, starting with noodles, chicken-spinach mixture, white sauce, and mozzarella cheese. Top with the final 3 noodles, remaining white sauce, and the rest of the mozzarella and grated Parmesan cheese.

          Bake the Lasagna: Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is bubbly and golden brown.

            Serve: Allow the lasagna to cool for 10 minutes before slicing. Garnish with fresh basil if desired, and serve warm.
