Ingredients
  

1 large head of cauliflower, chopped into florets

2 tablespoons unsalted butter

1/2 cup heavy cream (or milk for a lighter version)

1/2 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Fresh chives, chopped for garnish (optional)

Instructions
 

In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until tender. You can also steam them if you prefer.

    Drain the cauliflower well and let it sit in the colander for a minute to remove excess moisture.

      In a food processor or blender, combine the drained cauliflower, butter, heavy cream, garlic powder, salt, and pepper. Blend until smooth and creamy. For a chunkier texture, blend less.

        If using, fold in the grated Parmesan cheese until combined.

          Taste and adjust seasoning if necessary.

            Serve warm, garnished with chopped chives if desired.
