Ingredients

2 boneless chicken breasts, diced

2 tablespoons Cajun seasoning

1 tablespoon olive oil

4 cloves garlic, minced

1 small onion, diced

1 bell pepper (red or green), sliced

8 ounces fettuccine or pasta of choice

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Start by bringing a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

Season the Chicken: In a bowl, toss the diced chicken breasts with Cajun seasoning, ensuring each piece is evenly coated.

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the seasoned chicken and cook for 5-7 minutes, or until golden brown and cooked through. Remove from the skillet and set aside.

Prepare the Veggies: In the same skillet, add the diced onion and sliced bell pepper. Sauté for about 3-4 minutes until they soften. Add minced garlic and cook for an additional minute, until fragrant.

Make the Sauce: Pour in the chicken broth and bring to a simmer. Allow it to reduce slightly for about 2-3 minutes. Then, stir in the heavy cream and let it cook for another minute.

Combine Ingredients: Lower the heat and add the cooked chicken back into the skillet. Stir in the grated Parmesan cheese until melted and combined. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Mix in the Pasta: Add the drained fettuccine to the skillet, tossing everything together to coat the pasta in the creamy sauce. Season with additional salt and pepper as needed.

Serve: Garnish with freshly chopped parsley and serve hot, enjoying the delightful flavor and heat of your creamy Cajun chicken pasta!
