4 boneless, skinless chicken thighs

4 tablespoons unsalted butter, softened

2 cloves garlic, minced

1 tablespoon smoked paprika

1 tablespoon brown sugar

1 teaspoon cayenne pepper (adjust for heat preference)

1 teaspoon onion powder

1 tablespoon fresh lemon juice

1 teaspoon Worcestershire sauce

1 tablespoon fresh parsley, chopped (for garnish)

Salt and black pepper to taste

Prepare the Cowboy Butter: In a medium bowl, combine the softened butter, minced garlic, smoked paprika, brown sugar, cayenne pepper, onion powder, lemon juice, Worcestershire sauce, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Marinate the Chicken: Place the chicken thighs in a zip-top bag or a shallow dish. Pour half of the cowboy butter mixture over the chicken and marinate for at least 30 minutes (or up to 4 hours in the refrigerator for deeper flavor).

      Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop over medium-high.

        Grill the Chicken: Remove the chicken from the marinade and discard the used marinade. Grill the chicken thighs for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken has nice grill marks.

          Glaze with Remaining Cowboy Butter: In the last 2 minutes of grilling, smear the remaining cowboy butter mixture over the chicken thighs, allowing it to melt and coat the chicken.

            Serve: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes. Garnish with freshly chopped parsley before serving.
