Cottage Cheese and Spinach Salad

Ingredients
  

2 cups fresh baby spinach

1 cup cottage cheese (preferably small curd)

1/4 cup cherry tomatoes, halved

1/4 cup cucumber, diced

1/4 cup red bell pepper, diced

1/4 red onion, thinly sliced

2 tablespoons fresh lemon juice

1 tablespoon olive oil

1 teaspoon honey (optional)

Salt and pepper to taste

1/4 cup walnuts or pecans, chopped (for topping)

Fresh dill or parsley for garnish (optional)

Instructions
 

Prepare the Vegetables: Rinse the baby spinach thoroughly and pat dry. In a large mixing bowl, combine the fresh spinach, cherry tomatoes, cucumber, bell pepper, and red onion.

    Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, and honey (if using). Season with salt and pepper to taste.

      Combine Cottage Cheese: Gently incorporate the cottage cheese into the bowl with the vegetables, ensuring an even distribution without breaking up the cottage cheese too much.
