Ingredients
  

1 cup cottage cheese

1 medium cucumber, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Optional: cherry tomatoes, halved, for garnish

Instructions
 

In a large mixing bowl, combine the cottage cheese and diced cucumber.

    Add the diced red bell pepper, finely chopped red onion, and fresh dill to the bowl.

      In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. This will be your dressing.

        Pour the dressing over the cottage cheese mixture and gently stir until everything is well combined.

          If desired, top with halved cherry tomatoes for an extra burst of flavor and color.
