Ingredients
  

2 cups masa harina (corn dough)

1 cup chicken or vegetable broth (warm)

1 teaspoon baking powder

½ teaspoon salt

1 tablespoon melted butter or vegetable oil

Corn husks (soaked in warm water for at least 30 minutes)

1 cup shredded cheese (queso fresco or Chihuahua cheese)

Optional fillings: sautéed mushrooms, shredded chicken, or jalapeños

Instructions
 

Prepare the Corn Husk: Drain soaked corn husks and set them aside. Ensure they are pliable to fold easily.

    Make the Masa: In a large mixing bowl, combine masa harina, baking powder, and salt. Gradually add warm chicken or vegetable broth, mixing with your hands until you form a soft dough. Add melted butter and knead briefly.

      Assemble the Corundas: Take a corn husk and place about 2-3 tablespoons of masa dough in the center. Flatten it slightly and add a tablespoon of cheese and any desired fillings on top. Fold the sides of the husk in towards the middle, then fold the bottom section upwards, securing the filling.

        Steam the Corundas: Place the wrapped corundas upright in a steamer basket. Fill the bottom of the steamer with water, cover, and steam for about 45-60 minutes. The corundas are done when the masa separates easily from the husk.

          Serve: Remove from the steamer and let them cool slightly. Serve warm, drizzled with your favorite salsa or crema. Enjoy!
