1 lb boneless, skinless chicken breast

1 cup shredded carrots

1 cup green onions, chopped (reserve some for garnish)

1/2 cup red bell pepper, finely chopped

1/4 cup cilantro, chopped

1 cup cream cheese, softened

1/2 cup sweet and sour sauce

1 tbsp soy sauce

1 tbsp sesame oil

1 tsp garlic powder

1 tsp ground ginger

12 wonton wrappers

Oil for frying

Salt and pepper to taste

Lime wedges, for serving

Instructions
 

Cook the Chicken: In a pot, boil chicken breast in salted water for about 20 minutes or until fully cooked. Remove from heat, let cool, then shred using two forks.

    Prepare the Filling: In a large bowl, combine the shredded chicken, shredded carrots, chopped green onions, red bell pepper, cilantro, cream cheese, sweet and sour sauce, soy sauce, sesame oil, garlic powder, ground ginger, salt, and pepper. Mix thoroughly until everything is well incorporated.

      Form Wonton Cups: Preheat the oven to 375°F (190°C). Lightly spray a muffin tin with cooking spray. Gently press a wonton wrapper into each muffin cup, forming a small cup. Bake for 8-10 minutes or until lightly golden and crispy.

        Fill & Reheat: Once the wonton cups are baked, remove them from the oven. Fill each cup generously with the chicken filling. If desired, you can place them back in the oven for an additional 5 minutes to warm the filling.

          Serve: Garnish the tacos with remaining green onions. Serve immediately with lime wedges on the side.
