4 cups fresh peaches, peeled and sliced (or 2 cans of sliced peaches in syrup, drained)

1 cup granulated sugar (divided)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/2 cup whole milk

1/2 cup unsalted butter, melted

1 tablespoon cornstarch (optional, for thicker filling)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peaches: If using fresh peaches, peel and slice them. In a large bowl, combine the sliced peaches with 1/2 cup of sugar, lemon juice, vanilla extract, cinnamon, and salt. Let this mixture sit for about 10-15 minutes to allow the juices to develop. If you prefer a thicker filling, add cornstarch and stir well.

      Make the Batter: In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt. Gradually stir in the milk and melted butter until just combined; the batter will be thick and lumpy.

        Layer the Cobbler: Pour the batter into a greased 9x13-inch baking dish, spreading it evenly. Pour the peach mixture over the batter—do not stir; it will float on top during baking.

          Bake: Place the baking dish in the preheated oven and bake for 35-45 minutes, or until the top is golden brown and a toothpick inserted into the cobbler comes out clean.
