Cinnamon Sugar French Toast Muffins

6 slices of thick bread (such as brioche or challah)

4 large eggs

1 cup whole milk

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/2 cup maple syrup

1/2 cup unsalted butter, melted

1/4 cup brown sugar

Pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.

    Prepare the Bread: Cut the thick bread slices into small cubes, about 1-inch in size. Spread them out on a baking sheet and lightly toast in the oven for about 10 minutes, until they're a bit firmer but not browned.

      Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, nutmeg (if using), and a pinch of salt until well combined.

        Combine Bread and Egg Mixture: Add the toasted bread cubes to the egg mixture. Gently fold the bread into the mixture, ensuring all pieces are coated. Let it sit for about 10-15 minutes so the bread absorbs the egg mixture.

          Prepare the Cinnamon Sugar: In a small bowl, mix together the brown sugar and 1 teaspoon of cinnamon; set aside.

            Fill Muffin Tin: Spoon the bread and egg mixture into the prepared muffin tins, filling each cup about 3/4 full. Drizzle a small amount of melted butter over the top of each muffin.

              Sprinkle Cinnamon Sugar: Generously sprinkle the cinnamon sugar mixture over the tops of each muffin, ensuring each is well-coated.
