Chinese Beef and Onion Stir-Fry

1 lb (450g) beef sirloin, thinly sliced against the grain

2 large onions, sliced into thin wedges

3 cloves garlic, minced

1 inch ginger, grated

1 bell pepper (any color), sliced into strips

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 tablespoon sesame oil

1 teaspoon sugar

Salt and pepper to taste

Chopped green onions for garnish

Cooked jasmine rice, to serve

Marinate the Beef: In a bowl, combine sliced beef, soy sauce, cornstarch, and sugar. Mix well and let sit for 15 minutes to tenderize and add flavor.

    Prep the Stir-Fry Sauce: In a small bowl, mix the oyster sauce, sesame oil, and a pinch of salt and pepper. Set aside.

      Heat the Oil: In a large skillet or wok, heat the vegetable oil over high heat until shimmering.

        Stir-Fry the Beef: Add the marinated beef to the skillet in a single layer. Let it sear for about 1-2 minutes without stirring, allowing it to caramelize. Once browned, stir-fry for another 2 minutes until just cooked through. Remove the beef from the skillet and set aside.

          Cook the Vegetables: In the same skillet, add the sliced onions and bell pepper. Toss and stir-fry for about 3-4 minutes until they begin to soften. Add garlic and ginger and stir for another 30 seconds until fragrant.

            Combine: Return the beef to the skillet along with the stir-fry sauce. Mix well to coat the beef and vegetables. Stir-fry for an additional 2 minutes until everything is heated through and the sauce has thickened slightly.

              Serve: Remove from heat and garnish with chopped green onions. Serve immediately over cooked jasmine rice.
