1 pound flank steak, thinly sliced against the grain

3 cups broccoli florets

3 tablespoons vegetable oil, divided

4 cloves garlic, minced

1-inch piece ginger, grated

1/4 cup soy sauce

2 tablespoons oyster sauce

2 tablespoons cornstarch

1 tablespoon brown sugar

1 tablespoon rice vinegar

1/4 cup beef broth or water

Salt and pepper to taste

Sesame seeds for garnish (optional)

Cooked jasmine rice or noodles for serving

Marinate the Beef: In a mixing bowl, combine the sliced flank steak, soy sauce, cornstarch, and black pepper. Mix well, ensuring the beef is well-coated. Let it marinate for at least 15-30 minutes.

    Blanch the Broccoli: Bring a pot of salted water to a boil. Add the broccoli florets and cook for about 2 minutes until bright green and slightly tender. Drain and immediately transfer to an ice bath to stop cooking. Set aside.

      Prepare the Sauce: In a separate bowl, whisk together the oyster sauce, brown sugar, rice vinegar, and beef broth. Set aside.

        Stir-Fry the Beef: Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat. Once hot, add the marinated beef in a single layer. Stir-fry for about 3-4 minutes until browned and cooked through. Remove the beef from the wok and set aside.

          Cook the Aromatics: In the same wok, add the remaining tablespoon of oil. Add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant and golden.

            Combine All Ingredients: Return the cooked beef to the wok along with the blanched broccoli. Pour the sauce over the mixture and toss everything together. Stir-fry for an additional 2-3 minutes until heated through and the sauce has thickened slightly.
