1 lb beef flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

2 tablespoons vegetable oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/3 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon water

1 tablespoon brown sugar

1 tablespoon sesame oil

1/4 teaspoon black pepper

Cooked jasmine rice (for serving)

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced beef with 2 tablespoons of soy sauce, black pepper, and cornstarch. Toss to coat and let it marinate for about 15-20 minutes.

    Prepare the Broccoli: While the beef is marinating, bring a large pot of water to a boil. Add the broccoli florets and blanch them for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop the cooking process. Set aside.

      Make the Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce, brown sugar, water, and sesame oil. Set this sauce mixture aside.

        Stir-fry the Beef: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the marinated beef in a single layer. Let it sear for 1-2 minutes without stirring, then stir-fry for another 2-3 minutes until browned and cooked through. Remove the beef from the skillet and set aside.

          Cook Aromatics and Broccoli: In the same skillet, add a bit more oil if needed, and toss in the minced garlic and grated ginger. Stir-fry for about 30 seconds until aromatic. Add the blanched broccoli and stir well.

            Combine with Sauce: Return the beef to the skillet along with the reserved sauce. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld and the sauce to slightly thicken.

              Serve: Remove from heat and serve your beef and broccoli hot over a bed of freshly steamed jasmine rice.
