Chinese Beef and Broccoli

Ingredients
  

1 lb flank steak, thinly sliced against the grain

2 cups broccoli florets

3 cloves garlic, minced

1-inch piece ginger, grated

1/4 cup soy sauce (low-sodium)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

2 tablespoons vegetable oil

1 tablespoon brown sugar

1 teaspoon rice vinegar

Salt and pepper, to taste

1/4 cup beef broth (or water)

Cooked rice, for serving

Sesame seeds and sliced green onions, for garnish

Instructions
 

Marinate the Beef: In a mixing bowl, combine the sliced flank steak, 2 tablespoons of soy sauce, cornstarch, brown sugar, and a dash of pepper. Mix well and let it marinate for about 15-30 minutes to enhance the flavor and tenderness of the beef.

    Blanch the Broccoli: In a pot of boiling water, add the broccoli florets and blanch them for about 2 minutes until bright green but still crisp. Drain and immediately transfer to a bowl of ice water to stop cooking. Drain again and set aside.

      Prepare the Sauce: In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, oyster sauce, sesame oil, rice vinegar, and beef broth. Set this sauce mixture aside.

        Stir-Fry the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat. Add the marinated beef in a single layer and stir-fry for about 2-3 minutes until browned but not fully cooked. Remove the beef from the pan and set aside.

          Cook Aromatics: In the same skillet, add another tablespoon of vegetable oil and toss in the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.

            Combine and Finish Cooking: Return the beef to the skillet along with the blanched broccoli. Pour the sauce over the mixture and stir well to coat everything evenly. Cook for an additional 2-3 minutes, allowing the beef to fully cook through and the sauce to thicken slightly.

              Serve: Taste and adjust seasoning if necessary with salt and pepper. Serve hot over a bed of fluffy cooked rice, garnishing with sesame seeds and sliced green onions.
