Chili Mac

Ingredients
  

8 oz elbow macaroni

1 lb ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juices)

1 can (8 oz) tomato sauce

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon salt

¼ teaspoon black pepper

1 cup shredded cheddar cheese (plus more for topping)

½ cup sour cream (optional for serving)

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Cook the Meat: In the same pot, add the ground beef or turkey over medium heat. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain any excess fat.

      Sauté Vegetables: Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

        Add the Beans and Tomatoes: Stir in the kidney beans, black beans, diced tomatoes (with juices), and tomato sauce. Mix well.

          Season: Add the chili powder, cumin, smoked paprika, salt, and black pepper. Stir to combine and let the mixture simmer for about 5-10 minutes, allowing the flavors to meld.

            Combine: Add the cooked macaroni to the pot and stir until well mixed. Fold in the 1 cup of shredded cheddar cheese until melted and incorporated throughout.

              Serve: Spoon the Chili Mac into bowls, top with additional shredded cheese, a dollop of sour cream if desired, and garnish with cilantro or green onions.
