1 lb boneless, skinless chicken thighs

1 tablespoon olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup jasmine rice

2 cups chicken broth or water

1 cup Greek yogurt

1 cucumber, finely diced

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

1 clove garlic, minced

1 handful cherry tomatoes, halved

1/4 red onion, thinly sliced

Optional garnishes: feta cheese, fresh parsley, lemon wedges

Marinate the Chicken: In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add chicken thighs and coat well. Let it marinate for at least 30 minutes (or overnight for deeper flavor).
