Chicken Avocado Melt Sandwich

Ingredients
  

2 slices of whole-grain bread

1 ripe avocado

1 cup cooked chicken, shredded or diced

½ cup shredded mozzarella cheese

¼ cup plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: sliced tomatoes, fresh spinach, or sprouts

Instructions
 

Prepare the Avocado Mixture: In a bowl, mash the avocado with lemon juice, Greek yogurt, salt, and pepper until smooth. This will be the spread for your sandwich.

    Combine Chicken and Cheese: In another bowl, mix the shredded chicken with mozzarella cheese. Add a pinch of salt and pepper to enhance the flavor.

      Assemble the Sandwich: Spread the avocado mixture evenly on one side of each slice of bread. On one slice, layer the chicken and cheese mixture. If desired, add optional toppings like sliced tomatoes or spinach.
