Chicken Avocado Melt Sandwich

2 slices of whole grain or sourdough bread

1 cup cooked chicken breast, shredded or sliced

1 ripe avocado, peeled and pitted

1 tablespoon mayonnaise (optional)

1 teaspoon lime juice

Salt and pepper, to taste

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/4 cup shredded cheese (cheddar, mozzarella, or pepper jack)

Fresh spinach or arugula (optional)

Butter for spreading on bread

Prepare the Avocado Spread: In a bowl, mash the avocado with the lime juice, garlic powder, paprika, salt, and pepper. Mix until creamy, adjusting seasonings to your taste.

    Prepare the Chicken: If you’re starting with cooked chicken, shred or slice it into bite-sized pieces. Mix the chicken with mayonnaise if you desire a creamier texture; season with additional salt and pepper if needed.
