1 lb ground beef (or turkey)

1 packet taco seasoning

1 cup shredded cheddar cheese

1 cup shredded Mexican blend cheese

8 small flour tortillas

1 can (refried beans) or 1 cup black beans, drained and rinsed

1 cup salsa (mild or hot, your choice)

1 cup sour cream (for dipping)

Fresh cilantro (for garnish, optional)

Cooking oil spray or olive oil

Prepare the Filling: In a skillet over medium heat, brown the ground beef until fully cooked, about 6-8 minutes. Drain excess fat if necessary. Stir in the taco seasoning and instructions on the packet (usually adding water). Let simmer for 5 minutes, then remove from heat.

    Mix the Cheeses: In a bowl, combine the cheddar cheese and Mexican blend cheese. Set aside half of the cheese mixture for topping later.

      Assemble the Taco Sticks: Lay out a tortilla on a flat surface. Spread about 2 tablespoons of refried beans across the center. Add 2 tablespoons of the taco beef mixture followed by a generous sprinkling of the cheese blend. Roll the tortilla tightly, folding in the sides as you go to create a sealed stick. Repeat with the remaining tortillas and filling.

        Cook the Taco Sticks: Preheat your oven to 400°F (200°C). Place the rolled taco sticks seam side down on a greased baking sheet. Lightly spray the tops with cooking oil or brush with olive oil for a crispy finish. Bake for about 15-20 minutes until golden and crispy.

          Add the Topping: In the last 5 minutes of baking, remove the sticks and sprinkle the reserved cheese mixture on top. Return to the oven until the cheese is melted and bubbly.
