Cheesy Masala Beans on Toast

1 can (15 oz) mixed beans (kidney, black beans, and pinto)

1 medium onion, finely chopped

2 cloves garlic, minced

1 green chili, finely chopped (adjust to spice preference)

1 tsp ginger paste

1 tsp cumin seeds

1 tsp garam masala

1/2 tsp turmeric powder

1/2 cup diced tomatoes (fresh or canned)

1/2 cup shredded cheddar cheese (or cheese of preference)

4 slices of thick bread (whole grain or sourdough)

2 tbsp olive oil

Fresh coriander leaves for garnish

Salt and pepper to taste

Prepare Beans: Drain and rinse the mixed beans under cold water. Set aside.

    Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add cumin seeds and allow them to fry for about 30 seconds until fragrant. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Add Garlic and Spices: Stir in the minced garlic, ginger paste, and green chili. Sauté for an additional minute. Then, add turmeric powder and garam masala, mixing thoroughly.

        Tomatoes and Beans: Add the diced tomatoes to the skillet and cook for about 2-3 minutes until they soften. Next, add the mixed beans, stirring well to combine. Season with salt and pepper to taste. Simmer for about 5-7 minutes to let the flavors meld, stirring occasionally.

          Cheese It Up: Once the bean mixture has cooked and thickened slightly, lower the heat and carefully fold in half of the shredded cheese until melted and evenly distributed.

            Toast the Bread: While the beans are cooking, toast the bread slices until golden brown and crispy.

              Assemble: Spoon the cheesy masala beans generously over each slice of toasted bread. Top with the remaining shredded cheese.

                Melt the Cheese: Place the loaded toast on a baking tray and pop it under the broiler for 2-3 minutes, or until the cheese is bubbling and slightly golden.

                  Serve: Garnish with freshly chopped coriander leaves and serve immediately while warm.
