Cheesy Beef Enchilada Tortellini

12 oz cheese tortellini

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) red enchilada sauce

1 cup diced tomatoes (preferably fire-roasted)

1 cup black beans, drained and rinsed

1 cup corn kernels (frozen or canned)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5–7 minutes. Drain any excess fat.

      Add Onions and Garlic: Add the diced onion to the skillet with the beef and sauté for 3–4 minutes until softened. Then, stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Mix in Sauce and Veggies: Stir in the red enchilada sauce, diced tomatoes, black beans, corn, chili powder, cumin, paprika, and season with salt and pepper. Allow the mixture to simmer for about 5–7 minutes until heated through.

          Combine Tortellini: Gently fold the cooked tortellini into the beef and sauce mixture, ensuring all pasta is well-coated.

            Add Cheese: Sprinkle half of the cheddar and Monterey Jack cheese over the pasta mixture, fold to combine, then spread the remaining cheese over the top.

              Bake: Preheat your oven to 350°F (175°C). Transfer the mixture to a greased 9x13 inch baking dish. Bake for 20 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven, garnish with fresh cilantro if desired, and enjoy your Cheesy Beef Enchilada Tortellini warm!
