Cheesy Beef Burritos with Crispy Fries

For the Burritos:

1 lb ground beef

1 cup shredded cheddar cheese

½ cup shredded Monterey Jack cheese

1 can (15 oz) black beans, drained and rinsed

1 cup cooked rice

1 packet taco seasoning

4 large flour tortillas

½ cup sour cream

1 avocado, sliced

Fresh cilantro, for garnish

Salt and pepper to taste

For the Crispy Fries:

2 large russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

Fresh parsley for garnish

Instructions
 

Prepare the Crispy Fries:

    - Preheat your oven to 425°F (220°C).

      - Wash and peel the russet potatoes, then cut them into thin strips (fries).

        - Place the fries in a bowl and toss them with olive oil, garlic powder, paprika, and salt until evenly coated.

          - Spread the fries in a single layer on a baking sheet and bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.

            Cook the Beef Filling:

              - In a skillet over medium heat, add the ground beef. Cook until browned, stirring occasionally to break apart.

                - Drain any excess fat, then add taco seasoning and a splash of water, mixing well. Cook for another 3-4 minutes until the beef is fully coated and seasoned.

                  - Stir in black beans and cooked rice, cooking for 2-3 more minutes. Remove from heat and allow to cool slightly.

                    Assemble the Burritos:

                      - Lay out one flour tortilla flat on a clean surface. Spoon a generous amount of the beef mixture in the center, then sprinkle with both cheddar and Monterey Jack cheese.

                        - Add a dollop of sour cream and a few slices of avocado. Garnish with cilantro.

                          - Fold in the sides of the tortilla, then roll tightly from the bottom up. Repeat until all burritos are assembled.

                            Grill the Burritos:

                              - Heat a non-stick skillet over medium heat. Place each burrito seam-side down on the skillet and cook for 2-3 minutes on each side until golden and crispy.
