6 medium potatoes, peeled and diced

8 ounces bacon, diced

1 cup shredded sharp cheddar cheese

1 cup milk

4 large eggs

1/2 cup green onions, chopped (reserve some for garnish)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup frozen mixed vegetables (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Bacon: In a large skillet over medium heat, cook the diced bacon until crispy. Remove and drain on paper towels, leaving a little bacon fat in the skillet.

      Sauté Potatoes: In the same skillet, add the diced potatoes and cook in the bacon fat. Sauté for about 10-15 minutes, or until they start to become golden and tender. You can add a splash of water and cover with a lid to steam them for quicker cooking.

        Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

          Combine Ingredients: In a greased 9x13 inch casserole dish, layer the sautéed potatoes evenly. Add the crispy bacon and green onions (reserving some for garnish). If using, sprinkle the frozen mixed vegetables on top.

            Add Cheese & Egg Mixture: Sprinkle the shredded cheddar cheese over the potato and bacon layer. Pour the egg mixture evenly over everything, ensuring all parts are coated.

              Bake the Casserole: Cover the casserole dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and the top is golden brown.
