3 medium-sized carrots, grated

2 crisp apples (like Granny Smith or Honeycrisp), cored and diced

1/2 cup raisins or cranberries (dried)

1/4 cup walnuts or pecans, chopped (optional)

1/4 cup plain Greek yogurt

2 tablespoons honey or maple syrup

1 tablespoon apple cider vinegar

1/2 teaspoon cinnamon

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and diced apples.

    Add the raisins (or cranberries) and chopped nuts to the bowl. Mix well.

      In a separate small bowl, whisk together the Greek yogurt, honey (or maple syrup), apple cider vinegar, cinnamon, salt, and pepper until smooth.
