4 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1 tablespoon butter

1 cup diced bell peppers (red, yellow, and green)

1 medium onion, diced

2 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1 tablespoon chopped parsley (for garnish)

Instructions
 

In a small bowl, mix together the Cajun seasoning, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper.

    Pat the chicken breasts dry with paper towels and rub the Cajun spice mixture evenly over both sides of the chicken.

      In a large skillet, heat olive oil and butter over medium-high heat until the butter is melted and bubbly.

        Add the seasoned chicken breasts to the skillet and cook for 5-7 minutes on each side or until golden brown and the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and set aside.

          In the same skillet, add the diced bell peppers, onion, and garlic. Sauté for 3-4 minutes until the vegetables are tender.

            Pour in the heavy cream and chicken broth, stirring to combine and bring to a gentle simmer.

              Slice the chicken breasts and return them to the skillet, simmering everything together for another 3-4 minutes to meld the flavors.

                Taste and adjust the seasoning if necessary.

                  Garnish with chopped parsley before serving.
