Butter Steak Bites with Garlic Herb Potatoes

_For the Butter Steak Bites:_

1 pound sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

_For the Garlic Herb Potatoes:_

1.5 pounds baby potatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons fresh parsley, chopped

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, parsley, oregano, salt, and pepper until well-coated.

        - Spread the potatoes in a single layer on a baking sheet lined with parchment paper and roast for 25-30 minutes or until golden and crispy, flipping halfway.

          Cook the Steak Bites:

            - While the potatoes are roasting, season the sirloin steak cubes with salt and pepper.

              - In a large skillet, melt 2 tablespoons of butter over medium-high heat.

                - Once the butter is sizzling, add the steak bites in batches, ensuring not to overcrowd the pan. Sear for about 2-3 minutes on each side for a medium-rare finish. Remove the steak bites and set aside.

                  - Add the remaining butter, minced garlic, rosemary, and thyme to the skillet. Swirl the skillet to combine and let the garlic cook for about 1 minute until fragrant.

                    - Return the steak bites to the skillet, tossing to coat them in the garlic herb butter.

                      Serve:

                        - Plate the butter steak bites alongside the roasted garlic herb potatoes. Drizzle any remaining butter from the skillet over the steak for added flavor.
