1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup pecans, toasted and chopped

1/2 teaspoon ground cinnamon (optional)

Flaky sea salt for topping (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Beat in the egg and vanilla extract until well combined.

        In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

            Gently fold in the toasted pecans until evenly distributed throughout the cookie dough.

              Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each for spreading.

                Optional: Sprinkle a small pinch of flaky sea salt on top of each cookie dough ball before baking.

                  Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the center is set.

                    Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
