2 slices of sourdough bread

1/2 cup cooked shredded chicken

1/4 cup Buffalo sauce

1/2 cup shredded cheddar cheese

1/4 cup crumbled blue cheese (optional)

1 tablespoon unsalted butter

1 small celery stalk, chopped (for garnish)

Salt and pepper to taste

Prep the Chicken: In a bowl, combine the shredded chicken with Buffalo sauce. Adjust the amount of sauce based on your spice preference. Add salt and pepper to taste.

    Heat the Pan: Preheat a non-stick skillet over medium heat.

      Assemble the Sandwich: On one slice of sourdough, layer half of the cheddar cheese followed by the Buffalo chicken mixture. If using, sprinkle blue cheese on top, then add the remaining cheese. Top with the second slice of sourdough.
