Bow Tie Pasta Salad

Ingredients
  

8 oz bow tie pasta (farfalle)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup red onion, finely chopped

1/4 cup black olives, sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and black pepper to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Place them in a large mixing bowl.

      Combine Ingredients: Once the pasta is cooled, add it to the bowl with the veggies. Then, add the black olives, feta cheese, and fresh parsley.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper. Adjust the seasoning to taste.

          Dress the Salad: Pour the dressing over the pasta salad and toss everything together until well combined. Make sure the pasta and vegetables are evenly coated with the dressing.

            Chill and Serve: Refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
