Ingredients

1 lb baby bok choy, halved lengthwise

3 tablespoons oyster sauce

2 tablespoons soy sauce

2 teaspoons sesame oil

4 cloves garlic, minced

1 tablespoon ginger, finely minced

2 tablespoons vegetable oil (for stir-frying)

1 teaspoon sugar

1/4 cup water

1 teaspoon cornstarch mixed with 2 teaspoons water (optional for thickening)

Toasted sesame seeds (for garnish)

Chopped green onions (for garnish)

Instructions

Prepare the Bok Choy: Clean the bok choy thoroughly under running water, making sure to remove any dirt or grit between the leaves. Pat dry with a kitchen towel.

Make the Sauce: In a small bowl, mix the oyster sauce, soy sauce, sesame oil, minced garlic, minced ginger, and sugar. Stir well to combine.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering but not smoking.

Stir-Fry Garlic and Ginger: Add the minced garlic and ginger to the hot oil. Stir-fry for about 30 seconds until fragrant.

Add Bok Choy: Place the bok choy halves cut side down in the skillet. Stir-fry for about 1-2 minutes until the greens begin to wilt.

Pour the Sauce: Add the prepared sauce and water to the wok, gently tossing to coat the bok choy evenly. If using, add the cornstarch slurry at this point to thicken the sauce slightly.

Cook Thoroughly: Cover the skillet and cook for an additional 3-4 minutes, until the bok choy is tender but still vibrant green.

Serve: Transfer the bok choy to a serving platter, sprinkle with toasted sesame seeds and chopped green onions for garnish.
