Ingredients

4 salmon fillets (6 ounces each)

1 tablespoon smoked paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1/4 cup heavy cream

2 tablespoons Dijon mustard

1 tablespoon fresh lemon juice

Chopped fresh parsley, for garnish

Instructions

Prepare the Spices: In a small bowl, mix together the smoked paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and black pepper to create a blackened seasoning blend.

Coat the Salmon: Pat the salmon fillets dry with paper towels. Drizzle olive oil over the fillets and then generously rub the spice blend onto both sides of each salmon fillet.

Cook the Salmon: Heat a cast-iron skillet over high heat. Once hot, add the salmon fillets skin-side down. Cook for about 3-4 minutes without moving them, until the skin is crispy and the fish is cooked about halfway through. Flip and cook for an additional 2-3 minutes or until the salmon is cooked to your liking. Remove from the pan and let rest.

Make the Creamy Dijon Sauce: In the same skillet, lower the heat to medium. Add the heavy cream, Dijon mustard, and lemon juice to the pan. Scrape up any bits stuck to the bottom and stir well to combine. Let the sauce simmer for about 2-3 minutes until slightly thickened. Adjust seasoning if necessary.

Serve: Plate the blackened salmon fillets and drizzle the creamy Dijon sauce over the top. Garnish with fresh chopped parsley.

Enjoy: Pair this dish with steamed vegetables or a fresh salad for a complete meal.
