Black Pepper Chicken

Ingredients
  

1 lb (450 g) chicken breast, cut into bite-sized pieces

2 tablespoons vegetable oil

6 cloves garlic, minced

1 inch ginger, minced

1 bell pepper, sliced (red or green)

1 onion, sliced

2-3 tablespoons black pepper, freshly ground (adjust to taste)

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch mixed with 2 tablespoons water

1 teaspoon sugar

Salt to taste

Optional: Chopped green onions and sesame seeds for garnish

Marinate the Chicken: In a bowl, mix the chicken pieces with soy sauce, a pinch of salt, and half of the black pepper. Let it marinate for at least 20 minutes.

    Heat Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Sauté Aromatics: Add the minced garlic and ginger to the pan, stir-frying for about 30 seconds until fragrant.

        Cook Chicken: Add the marinated chicken to the skillet. Stir-fry for about 5-7 minutes or until the chicken is cooked through and slightly browned.

          Add Vegetables: Toss in the sliced bell pepper and onion, continuing to stir-fry for another 3-4 minutes until they start to soften but still retain a crunch.

            Season: Sprinkle in the remaining black pepper, oyster sauce, and sugar, stirring to combine. Adjust seasoning with salt if needed.

              Thicken Sauce: Pour the cornstarch mixture into the skillet, stirring quickly until the sauce thickens and coats the chicken and vegetables, about 1-2 minutes.

                Serve: Remove from heat and garnish with green onions and sesame seeds, if desired. Serve hot over steamed rice or noodles.
