Biscuits and Chorizo Gravy

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup buttermilk

For the Chorizo Gravy:

8 oz chorizo sausage, casing removed and crumbled

2 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Prepare the Biscuits: Preheat your oven to 425°F (220°C). In a large bowl, mix the flour, baking powder, baking soda, and salt. Add the cubed butter and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.

    Pour in the buttermilk and stir gently until just combined. For flakier biscuits, avoid over-kneading; it’s okay if the dough is slightly shaggy.

      Turn the dough onto a floured surface, flatten it to about 1-inch thick, and cut out biscuits with a round cutter. Place them on a baking sheet lined with parchment paper.

        Bake in the preheated oven for about 15-20 minutes, or until golden brown.

          Prepare the Chorizo Gravy: While the biscuits are baking, cook the crumbled chorizo in a skillet over medium heat until browned and cooked through. Remove from the skillet and set aside, leaving the fat in the pan.
