Bibingka Recipe

2 cups rice flour

1 cup coconut milk

1 cup water

1 cup shredded coconut (preferably fresh)

1 cup brown sugar (packed)

1/2 cup baking powder

1/2 teaspoon salt

3 large eggs

4 tablespoons unsalted butter (melted)

Banana leaves (for wrapping)

Sliced salted eggs (for topping)

Grated cheese (for topping, preferably quick-melting cheese)

Coconut (freshly grated for serving, optional)

Instructions
 

Preparation of Banana Leaves: Preheat your oven to 375°F (190°C). If using banana leaves, briefly heat them over an open flame until they're pliable, then cut them into circles to line the bottom of your baking dish. This will add wonderful flavor to the bibingka.

    Mix Dry Ingredients: In a large mixing bowl, combine the rice flour, baking powder, brown sugar, and salt. Whisk until well blended, ensuring there are no lumps.

      Mix Wet Ingredients: In another bowl, whisk together the eggs, coconut milk, and water until fully combined.

        Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients while stirring continuously. Do this until the mixture is smooth. Add the melted butter and mix until fully incorporated. Finally, fold in the shredded coconut.

          Prepare the Baking Dish: Line your baking dish with prepared banana leaves, making sure they cover the edges. Make sure to leave some excess for folding over later.

            Pour and Bake: Pour the batter into the lined dish. Top with slices of salted eggs and sprinkle grated cheese evenly over the top.

              Bake: Place the dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.

                Serve: Allow the bibingka to cool slightly before slicing. Serve warm with extra grated coconut on top if desired.
