3 ripe bananas, mashed

1/2 cup unsweetened applesauce

1/4 cup brown sugar

1/4 cup granulated sugar

1/2 cup unsweetened shredded coconut

1/2 cup crushed pineapple, drained

1/2 cup Greek yogurt

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1 1/2 cups all-purpose flour

1/2 cup chopped walnuts or macadamia nuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

    In a large mixing bowl, combine the mashed bananas, applesauce, brown sugar, and granulated sugar. Mix until smooth and well combined.

      Stir in shredded coconut, crushed pineapple, Greek yogurt, and vanilla extract.

        In another bowl, whisk together the baking soda, baking powder, salt, cinnamon, and flour. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix.

          If using, gently fold in the chopped nuts.

            Pour the batter into the prepared loaf pan and spread it evenly.

              Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.

                Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
