Beef and Broccoli Lo Mein

8 oz lo mein noodles

1 lb beef flank steak, thinly sliced against the grain

2 cups broccoli florets

2 tablespoons vegetable oil, divided

1 bell pepper, thinly sliced (red or green)

3 cloves garlic, minced

1 inch ginger, minced

3 green onions, chopped

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

1 tablespoon rice vinegar

Salt and pepper to taste

Sesame seeds for garnish (optional)

Instructions
 

Prepare the Noodles: Cook the lo mein noodles according to the package instructions. Drain and set aside.

    Marinate the Beef: In a bowl, combine the sliced beef, soy sauce, cornstarch, and sesame oil. Let it marinate for at least 15 minutes.

      Blanch the Broccoli: In a pot of boiling water, blanch the broccoli florets for 2 minutes until bright green and tender-crisp. Drain and set aside.

        Stir-Fry the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef in a single layer and stir-fry for about 2-3 minutes until browned. Remove the beef from the skillet and set aside.

          Sauté Vegetables: In the same skillet, add the remaining tablespoon of oil. Add minced garlic, ginger, and bell pepper, stir-frying for 2 minutes until fragrant.

            Add Broccoli and Noodles: Add the blanched broccoli and cooked lo mein noodles to the skillet. Toss to combine.

              Combine and Sauce: Return the beef to the skillet. In a small bowl, mix together oyster sauce, rice vinegar, and a pinch of salt and pepper. Pour this sauce over the stir-fried ingredients and toss everything together for 2-3 minutes to heat through and combine the flavors.

                Finish and Serve: Remove from heat and garnish with chopped green onions and sesame seeds if desired. Serve immediately and enjoy your delicious Beef and Broccoli Lo Mein!
