BBQ Chicken Quesadilla

Perfectly combining shredded chicken tossed in BBQ sauce, gooey cheddar and mozzarella, sweet corn, and caramelized red onions, this recipe is a crowd-pleaser. Ingredients
  

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1 medium red onion, thinly sliced

1 cup corn (frozen or canned, drained)

1/2 cup fresh cilantro, chopped

4 large flour tortillas

2 tablespoons olive oil

Sour cream and avocado for serving (optional)

Instructions
 

In a medium bowl, combine the shredded chicken and BBQ sauce, mixing well to ensure the chicken is fully coated.

    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced red onion and sauté for about 5-7 minutes until they are soft and slightly caramelized. Remove from the skillet and set aside.

      In the same skillet, add a tortilla and sprinkle half of the cheddar and mozzarella cheeses evenly over one half of the tortilla.

        Spoon a portion of the BBQ chicken mixture over the cheese, followed by a layer of sautéed red onions and corn. Sprinkle a little more cheese on top before folding the tortilla over.

          Cook the quesadilla for about 3-4 minutes on one side, or until golden brown. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

            Repeat this process with the remaining tortillas and filling.

              Once all quesadillas are cooked, let them rest for a minute before cutting them into wedges. Garnish with fresh cilantro.

                Serve hot with sour cream and sliced avocado on the side, if desired.
