Ingredients
  

1 cup pearl barley

4 cups water or vegetable broth

1 cup almond milk (or any milk of your choice)

1 tablespoon maple syrup (or honey)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

Toppings:

Fresh fruits (e.g., sliced bananas, berries)

Chopped nuts (e.g., almonds, walnuts)

Dried fruits (e.g., raisins, apricots)

A dollop of yogurt (optional)

Instructions
 

Rinse the pearl barley under cold water to remove any dust or impurities.

    In a medium pot, combine the rinsed barley and water (or vegetable broth). Bring to a boil, then reduce heat to low, cover, and let it simmer for about 30-40 minutes, or until the barley is tender and has absorbed most of the liquid.

      Once the barley is cooked, stir in the almond milk, maple syrup, vanilla extract, cinnamon, and a pinch of salt. Mix well and let it simmer for an additional 5-10 minutes, allowing the flavors to meld and the porridge to thicken slightly.
