1 lb (450g) boneless, skinless chicken breasts

1 cup cornstarch

Salt and pepper to taste

1 cup vegetable oil (for frying)

1 cup cooked jasmine rice

1 cup shredded carrots

1 avocado, sliced

1 cup thinly sliced cucumber

1/2 cup green onions, sliced

1/4 cup fresh cilantro, chopped

1/2 cup spicy mayo (sriracha mixed with mayonnaise)

1 tablespoon sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces. Season them with salt and pepper.

    Coat in Cornstarch: Place the cornstarch in a bowl. Dredge the seasoned chicken pieces in the cornstarch until they are evenly coated. Shake off any excess cornstarch.

      Heat Oil: In a large skillet or frying pan, heat the vegetable oil over medium-high heat until hot (about 350°F / 175°C).

        Fry the Chicken: Carefully add the chicken pieces to the hot oil, working in batches if necessary. Fry until golden brown and cooked through (about 5-7 minutes). Remove and place on a paper towel-lined plate to drain excess oil.

          Assemble the Bowls: In a serving bowl, layer the cooked jasmine rice as the base. Top the rice with fried chicken, shredded carrots, cucumber slices, and avocado.

            Add the Sauce: Drizzle the spicy mayo generously over the top, and then sprinkle with sliced green onions, fresh cilantro, and sesame seeds for added crunch and flavor.
