Ingredients

1 lb boneless, skinless chicken thighs

1 cup cornstarch

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Oil for frying

1 cup cooked jasmine rice

2 cups mixed greens (baby spinach, arugula, etc.)

1 cup shredded carrots

1 cucumber, thinly sliced

1/4 cup chopped green onions

1/4 cup sesame seeds

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 teaspoon sriracha (adjust to taste)

Juice of 1 lime

Instructions

Prepare the Chicken: In a large bowl, mix the cornstarch, salt, pepper, garlic powder, and smoked paprika. Cut the chicken thighs into bite-sized pieces and toss them in the cornstarch mixture until well coated.

Fry the Chicken: In a large skillet or deep fryer, heat oil over medium-high heat. Once the oil is hot, fry the coated chicken pieces in batches until they are golden brown and cooked through (about 5-7 minutes per batch). Transfer to a paper towel-lined plate to drain excess oil.

Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Taste and adjust spiciness if needed.

Assemble the Bowls: In each serving bowl, place a base of cooked jasmine rice. Top with mixed greens, shredded carrots, and cucumber slices.

Add the Chicken: Arrange the fried chicken pieces over the top.

Drizzle with Sauce: Generously drizzle the Bang Bang sauce over the chicken.

Garnish and Serve: Sprinkle with chopped green onions and sesame seeds. Serve immediately and enjoy!
