Ingredients

2 cups cooked jasmine rice

1 lb boneless chicken breast, cut into bite-sized pieces

1/2 cup corn starch

1/2 cup buttermilk

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

2 tablespoons sriracha (adjust based on spice preference)

1 tablespoon honey

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded carrots

1 cup cucumber, julienned

1/4 cup green onions, sliced

Sesame seeds for garnish (optional)

Fresh cilantro for garnish (optional)

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces with buttermilk, garlic powder, onion powder, salt, and pepper. Let it marinate for at least 30 minutes to enhance the flavor and tenderize the chicken.

Prepare the Sauce: In a mixing bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, soy sauce, and lime juice. Adjust the spiciness by modifying the amount of sriracha according to your taste. Set aside.

Coat the Chicken: After marinating, remove the chicken pieces from the buttermilk and dredge them in corn starch, ensuring they are well-coated to create a crispy texture.

Fry the Chicken: In a large skillet or frying pan, heat oil over medium-high heat. Once hot, carefully add the coated chicken pieces in batches and fry until golden brown and cooked through (about 6-8 minutes). Remove and drain on paper towels.

Assemble the Bowl: In serving bowls, add a generous scoop of cooked jasmine rice. Top with fried chicken pieces, shredded carrots, and cucumber.

Drizzle with Sauce: Spoon the bang bang sauce over the chicken and rice.

Garnish: Sprinkle with sliced green onions, sesame seeds, and fresh cilantro if desired.

Serve: Enjoy your Bang Bang Chicken Bowl warm and fresh!
